Fresh, summery and tasty, the rice salad smells of citrus fruits!
Ingredients
Serves 4
250 gr of rice
500 gr of clams
500 gr of mussels
300 gr of dormice
2 hardboiled egg yolks
1 lemon ( 3 tablespoons of LIMMI )
Extra-virgin olive oil
Salt
Preparation
Carefully clean mussels and clams, put them in two different pans, do not add any seasoning, place on the flame and make them open. Take the shellfishes out of the valves.
Cook the dormice in salted water for about 10 minutes and when they are cool cut them in half. Boil the rice in plenty of salted water, strain it, pass it under the fresh water to stop cooking, put it in a bowl and add clams, mussels and dormice to it.
Prepare the sauce: crumble the yolks, pour slowly about three tablespoons of olive oil as if you prepared a mayonnaise and, when the sauce is solid enough, add the lemon juice and a pinch of salt. Pour it on the rice and keep cool before serving.
