Sweet fig jam and lemon juice syrup
You won’t figure out that figs in oil are actually a sweet fig jam in a lemon-based syrup.
The syrup look could give you the idea of something in oil but, truly, the taste is very sweet!
This is a recipe very easy to arrange, but you must be careful in selecting not-so ripen figs. It’s pretty difficult to find out the precise doses to use! We should ask Livorno’s inhabitants… More or less, you should leave figs into a blend of lemon juice and sugar; then boil for an hour and let stand 1 day in the same lemon based infusion, hence simmer for an hour. Once cooked (and still hot), put the figs into sterilized jars (40 minutes).
This recipe has been handed down from generation to generation by Livornesi and indeed it’s strongly related to a domestic tradition of August and September.
