The ancient Greeks thought of asparagus as a strong aphrodisiac, and in the Middle Ages it was even recommended to enhance fertility. It is said that the Sun King, Louis XIV, loved it so much that he ordered an obelisk to be erected in Versailles to honour a gardener who managed to cultivate them year-round.
For a romantic St. Valentine's day dinner, we suggest a refined dish, accompanied by a white, slightly sparkling wine to be consumed only... by candle light.
Ingredients
Serves 2
- 400 gr. asparagus, thoroughly cleaned and washed
- 2 eggs
- 80 gr. ventresca tuna
- 2 tablespoons of oil
- 1 tablespoon capers
- the juice of 1 lemon
- salt
- a pinch of paprika
Procedure
Cook the asparagus in hot water, drain and set aside to cool down. Separate the eggs and reserve the whites. Place the yolks and the other ingredients in a blender and mix. Beat the egg whites till stiff peaks form, then fold them into the blended mixture.
Place the asparagus on two plates and dress them with the just prepared "Cupid's foam".
