- 2 rolls pastry crust
- 1 egg white
- 5 egg yolks
- 20 tablespoons sugar
- 6 tablespoons corn starch
- 10 ml cold water
- 40 ml boiling water
- 2 tablespoons butter
- 200 ml LIMMI lemon juice
- vanillin (powdered vanilla)
- 140 g dark chocolate
- 3 tablespoons butter
Preheat the oven at 200° C, and start making the filling.
In a pan, mix the sugar with the corn starch, add the cold water, and stir till smooth. Place the pan on the stove, add the hot water and cook on medium-high heat, while stirring. Once the cream thickens and starts to bubble, take it off the heat, and stir in the melted butter and egg yolks with a whip. Lastly, add the lemon juice, vanillin. Mix thoroughly, and put the cream in the refrigerator to rest for about 15 minutes.
Unroll the pastry crust and lay it in a heart-shaped cake pan. Poke holes in the pastry with a fork, and pour the cooled cream into it. Cover it with the other roll of pastry crust, and carefully seal the edges so the cream won’t leak out. Poke holes in the top crust with a fork, and brush it with egg white. Bake for 20 minutes, lower the temperature to 150° C, and bake for another 10/15 minutes till the crust is golden.
While the pie bakes, prepare the chocolate glaze. Melt the butter and chocolate in the microwave for 30/40 seconds. Stir to combine.
Pour the chocolate glaze over the entire top of the pie, and place it in the refrigerator till ready to serve, garnished with a strawberry.
Have a merry and delicious Valentine’s day!
