Old fashioned lemon meringue pie (from Million Dollar baby movie)

Ingredients

For the base

  • 250 gr of flour
  • 50 gr of sugar
  • 180 gr of butter
  • 75 ml of chilled water
  • 1 egg yolk
  • Grated rind of 1 lemon

For the stuffing

  • 3 eggs
  • 225 gr of sugar
  • Juice of 2 lemons (6 tablespoons of Limmi lemon juice)
  • Grated rind of 1 lemon

For the meringue

  • 3 whites of egg
  • 50 gr of sugar

Preparation

Take the butter out of the fridge and let it soften. Put flour, sugar, the egg yolk, the lemon grated rind and butter a fiocchetti.

Mould till you a form a stretchy mixture which you will remove from hands carefully dusting them with flour. Form a ball and let stand in the fridge for 30 minutes. Then roll out the dough on a floured top using a rolling pin.
Butter and flour a cake tin with a pull-out rim (apprx 26 cm wide) and wad it with the dough. Jab it with a fork, cover with oil-paper on which you will put dry beans and cook in an oven at 190° for about 15 minutes.

Lemon cream: in the meanwhile prepare the lemon cream mixing the lemons juice, their rind, sugar, the minced butter in a pyrex glass bowl which you will warm “a bagno maria” ( that is on a pan containing some slightly boiling water) Mix from time to time till the butter is melted. Add the eggs, well beaten, and cook, mixing continuously, until the mixture is a bit thickened, that is till it covers up the back of a spoon.
Pour this lemon cream on the pastry base taken out of the oven, taking the beans and the oil-paper away.
Spread the egg whites beaten stiff which you will sweeten with sugar only in the end. Put in the oven at 180° for about 20 minutes, the time necessary for the meringue to colour. Take the meringue out of the oven and cool it before eating.
