Salt-crust Baked Tiger Shrimp

Ingredients

  • 600 gr. tiger shrimp
  • 1 kg coarse sea salt
  • 1 sprig parsley, minced
  • sage
  • Limmi lemon juice
  • 1 sprig thyme
  • Rosemary

Preparation

Mince all the herbs, place them in a bow and mix them with coarse sea salt.
Wash the tiger shrimp under running water and dry them. Place a layer of the salt and herbs mix on a baking sheet, and arrange the tiger shrimp on it without overlapping them. Lastly, cover the shrimp completely with the remaining salt.
Bake on high heat (200°) for about 20 minutes. Once cooked, break the salt crust, shake each shrimp to remove the excess salt, drizzle with lemon and serve hot accompanied by a fresh salad dressed with extra-virgin olive oil, salt and lemon juice.
