Artichoke Crudités

The artichoke? Is a healthy vegetable rich in beneficial properties: it cleans, detoxifies and is a low-calorie food. When paired with lemon, it’s a true cure-all, and all of its nutritional properties are preserved when eaten raw.
Use this recipe to make an excellent side dish, or a quick, complete single course for a light and tasty lunch. Say Buon Appetito with artichoke crudité.

Ingredients (for 2-3 servings)

  • 5 artichoke hearts
  • 5 tablespoons Limmi lemon juice
  • a few slivers of Grana Padano cheese
  • balsamic vinegar from Modena
  • extra-virgin olive oil
  • Himalayan pink salt
  • white pepper

Preparation

Clean the artichokes and cut off the thorn and tip of each leaf. With a sharp knife, cut the artichokes into thin strips and place them in a bowl of water mixed with lemon as you go, to keep them from browning. Place the artichoke slices marinated in Limmi lemon juice on a serving platter and season with salt, pepper, a few drops of balsamic vinegar and extra-virgin olive oil. Lastly, garnish with shaved Grana Padano cheese.
