Our artichokes, radicchio and tuna bruschetta is a healthy, delicious, and utterly enticing appetizer. Buon AppetiLimmi!
Ingredients (for 4-6 servings)
- 3-4 artichokes
- 5 tablespoons Limmi Lemon juice
- 1 can of tuna in oil
- 3 tablespoons extra-virgin olive oil
- 3 radicchio leaves
- 2 anchovies, de-salted
- toasted slices of bread
Clean the artichokes cut the thorns and tips off their leaves. Slice the artichokes into thin strips with a sharp knife, placing them immediately in water with lemon juice as you go, to keep them from browning. Place the Limmi lemon marinated artichoke strips in a bowl, then add tuna split into small pieces and the anchovies, rinsed to remove the salt and minced beforehand. Lastly, add freshly cleaned, thinly sliced radicchio leaves, and then season everything with oil, salt and pepper. Toast a few slices of rustic Italian bread, top them with the artichokes mixture and serve.
