Bread Gnocchi with Salmon and Lemon

This absolutely delightful dish can be served as a lunch or dinner entree, and is also a great way to use leftover bread.

You will need

  • 200 g bread (inner crumb only, remove the crust)
  • 80 g flour type 00
  • 1 egg
  • 20 g Parmigiano cheese
  • 100 ml LIMMI lemon juice
  • 130 ml milk
  • 100 g smoked salmon
  • Chives, to taste
  • Salt and pepper, to taste

Preparation

Break the bread into small pieces, place it in a bowl and add warm milk. Break the bread up with your fingers, and then add the flour, 1 egg, 1 tablespoon LIMMI lemon juice, Parmigiano cheese, salt and pepper to taste. Keep mixing the dough until all ingredients are evenly distributed.

Sprinkle some flour on a pastry board. With your hands, roll the dough into a thick rope, and cut it into small, gnocchi-sized pieces.

Place the gnocchi in a pot of boiling water, and drain them as soon as they rise to the surface.

In the meantime, melt the butter in a frying pan; add small pieces of salmon, Limmi lemon juice and chives to taste.

Add the drained gnocchi to the pan, stir to coat them with the sauce, and serve topped with a sprinkle of chopped chives.
