Citrus Pound Cake

plumcakeHere is the recipe for an amazingly fragrant pound cake to enjoy with a nice cup of tea, for breakfast or as a mid-afternoon snack: citrus pound cake, the perfect marriage of lemon and orange!


  • 180 gr. flour
  • 50 gr.  potato starch
  • 160 gr. butter
  • 160 gr. sugar
  • 3 eggs
  • 1 envelope baking powder
  • 6 tablespoons Limmi lemon juice
  • zest of an orange


Beat the eggs (at room temperature) with the sugar until foamy, using an electric beater. Melt the butter in a pan and gently stir it into the mixture. Now add 6 tablespoons of Limmi lemon juice and the orange zest (avoid grating into the white, bitter part), then keep stirring. Sift the flour together with the potato starch and the baking powder, then add it to the eggs mixture using a wooden spoon. Line a pound cake pan with baking paper, pour the batter into it and bake for about 30 minutes at 180° C. To check if it’s done, poke it with a toothpick (if it comes out dry, then it’s cooked through). Serve with a nice cup of tea sweetened with Limmi Sweet lemon juice.
