Squids, when combined with lemon juice, become a tasty and light second course.

Ingredients for 4 servings:
- 800 g of fresh squid
- 1 bunch of parsley
- 2 sprigs of thyme
- 50 ml of extra virgin olive oil
- 1 clove of garlic
- 30 ml of Limmi lemon juice
- 100 ml of Morita teriyaki sauce
- Salt to taste
- White pepper to taste
Preparation:
Clean the squid by removing the tentacles, innards and cartilaginous quill, rinse them well under running water, and dry with a sheet of paper towel. Make small rhombus cuts on the surface so they don’t curl up while cooking. Divide them in half across the width.
Put the calamari in a bowl with a peeled garlic clove, lemon juice, extra virgin olive oil, chopped parsley, thyme, salt and pepper, and leave them to marinate for at least 10 minutes.
At this point, remove the squid from the marinade and cook on the hot grill for 2 minutes per side.
Once done cooking, let cool, stack 3 or 4 squid halves on each skewer with the tentacle on top, and add the teriyaki sauce with a brush, applying generously. If you have a torch, you can pass it over the skewers to give the sauce a more smoky taste.
Serve by adding a drizzle of extra virgin olive oil, and garnish with your choice of thyme and parsley.
