This wholesome grains, dry fruit and nuts-based granola with a hint of lemon scent can be used immediately or stored in airtight glass jars. Enjoy it as a delightfully crunchy breakfast, or to add an intriguing touch to our classic lemon mousse.
This granola is easy to prepare, tastes delicious with yogurt or milk, and is a wholesome snack to enjoy whenever you take a break, perhaps with even more berries.
- 350 g rolled oats
- 50 g mixed seeds (like pumpkin, chia, flax, sesame, etc.)
- 100 g almonds
- 40 g raisins
- 60 g hazelnuts
- 130 g honey
- 3/4 tablespoons LIMMI lemon juice (or LIMMI lemon and ginger juice)
- 2 tablespoons vegetable oil or coconut oil
- your choice of berries
Place the rolled oats, nuts, raisins and seeds in a large bowl. In a separate bowl, thoroughly mix the oil with the honey and lemon juice. Next, pour the liquid mixture into the bowl with the dry ingredients and stir till thoroughly combined.
Line a baking pan with parchment paper. Pour the mix into the pan and spread it to form an even layer.
Bake the granola in a pre-heated oven at 160°C for about 25 min, till toasted.
Once it cools, crumble it with your hands. You can either use it immediately as a topping for creamy desserts, as a tasty mid-afternoon snack, or store it in airtight containers and enjoy it on other occasions.
