Ingredients
- 6 new potatoes
- 1 shallot
- 2 celery hearts
- parsley to taste
- basil to taste
- chives to taste
- 4 tablespoons Limmi lemon juice
- 1 tablespoon extra-virgin olive oil
For the juice
- 1 orange
- 1 pink grapefruit
- 1 teaspoon Limmi lemon juice
Preparation
Wash the potatoes and, without peeling them, place them in a pot filled with cold water. Once the water boils, let them cook for about 20 minutes.
Meanwhile, wash and clean the celery, and slice it into 1/2 cm. long chunks. Clean the shallot and finely chop it. Wash the parsley and basil.
Once the potatoes are done, let them cool and peel them.
In a bowl, mix the extra-virgin olive oil with the Limmi lemon juice and a pinch of salt till well blended.
Cut the cold potatoes into large chunks and place them in a bowl together with the celery and shallot. Coat them with the oil and lemon dressing. Lastly, sprinkle with shredded parsley and a few basil leaves.
Serve with a glass of fresh juice made with one orange, grapefruit, and Limmi lemon juice.
