Remember to pick up what you need for this dish the next time you grocery shop:

  • 1 cup of basmati rice
  • 2 hot green peppers (chopped)
  • 1 small chunk of fresh ginger (peeled and finely chopped)
  • 1/4 cup peanuts
  • 1/4 teaspoon turmeric
  • 6 tablespoons LIMMI lemon juice
  • 2 teaspoons extra-virgin olive oil
  • 1 teaspoon cumin seeds
  • 1 teaspoon sesame seeds
  • 1 teaspoon urad dal
  • salt (to taste)
  • coriander (to garnish)

Preparation

Place the rice in a pot with about 2 cups of water, turmeric and salt. Lower the heat and cook for 15 minutes or till done. Once it’s ready, take it off the heat and let it rest for 5 minutes.

Set the burner to medium, place two teaspoons of extra-virgin olive oil in a pan, add the sesame seeds, cumin and urad dal, then sauté for 2-3 minutes. Thereafter, add the green peppers, ginger, and peanuts, and stir once in a while.

Add this mix of spices to the cooked rice, and stir thoroughly to fully combine all the ingredients.

Take the pan off the burner, add the LIMMI lemon juice, and serve garnished with coriander.
