This light, delicious sweet treat is perfect for breakfast, snack time, or whenever you crave something tasty, yet quick to make, low in calories, free of butter as well as… guilt!
You’ll need doughnut baking pans and may wish to give silicone ones a try, as they are quite easy to clean.

- 150 g ricotta cheese (you can also try making it yourself with our recipe)
- 100 g sugar, or 40 g of stevia if you prefer
- 2 eggs
- 50 ml Limmi lemon juice
- 80 g potato starch
- 170 g flour
- 1 packet of baking powder (10 g)
Preparation
While the oven preheats, beat the ricotta and sugar (or stevia) in a bowl with an electric mixer or a hand whip, to obtain a smooth and dense cream. Mix in the eggs and then, a little at a time, mix in the sifted flour, potato starch, lemon juice and lastly the packet of baking powder.
Pour the batter in the buttered doughnut moulds and bake at 180°C for 15/20 minutes.
Top the doughnuts with sifted confectioners’ sugar. For a more luscious version, serve them with fragrant lemon cream.
