Lemon Gelè is a famous dessert of the culinary tradition of Sicily, loved for its freshness and simplicity in preparation, with a few simple ingredients.

- 800 ml of water
- 250 grams of sugar
- 200 ml of lemon juice Limmi
- 90 grams of starch for cakes
In a container combine the lemon juice with the water and pour the mix little by little into a pot where you have put the sifted starch.
Add sugar to the mixture, put the pot on the stove over moderate heat, stirring gently and continuously. When the mixture has reached the boiling point with a sticky consistency, remove from heat and put to cool in aluminum or silicone molds.
Once it is lukewarm, transfer the lemon gelè to the refrigerator for as long as it takes to get more or less the consistency of a pudding (minimum 3 hours). Serve cold and decorate with some mint leaves and some red fruits on top.
