Summer has started to make itself known, and what could be better than a refreshing lemon granita to fend off the heat? If you don’t have an ice cream machine, don’t worry: our granita does not require it, and with a little care you can eliminate those irksome chunks of ice!
Especially suited for those who own a lemon tree, this fresh recipe uses readily available natural products.
Ingredients
- 350 ml water
- 300 gr. sugar
- 300 ml lemon juice or Limmi lemon juice
- 20 gr. honey (not overly aromatic)
Preparation
Over very low heat, melt the honey flavoured with the juice of ½ lemon (2 tablespoons Limmi), pulp from one lemon slice, and a few pieces of lemon zest. Cool and refrigerate for 24 hours.
Heat the water with the sugar and zest of two lemons, being careful to remove and use only the yellow part of the rind (and none of the bitter, white part). Once the water boils, lower the heat and let it thicken for a few minutes while stirring with a wooden spoon. Thereafter, filter the flavoured water and add the honey mixture, filtered as well. Blend all the ingredients till smooth, using an electric blender.
Place and leave the granita in the freezer (set on medium) overnight, without mixing it.
With this method, you can make fluffy and utterly delicious lemon granita without an ice cream maker.
