Marinating allows you to exploit the beneficial properties of lemon.
Thanks to its micronutrients, especially vitamin C and potassium, lemon promotes good digestion, detoxifies the body, lowers blood pressure and improves the appearance of skin.

Here’s how to prepare lemon marinated chicken breast.

  • 4 slices of chicken breast
  • 6 tablespoons Limmi lemon juice
  • 1 onion
  • hot pepper to taste
  • parsley to taste
  • 10 ml extra-virgin olive oil
  • 200 gr. carrots
  • 200 gr. celery
  • salt to taste

Equipment: Bowl, pan, plastic wrap

Clean and cut the onion into thin slices. Cut the hot peppers into thin strips.
Place the chicken breast in a bowl with half of the onion, the hot peppers and lemon juice.
Cover the chicken immersed in the lemon marinade with plastic wrap and place it in the refrigerator for about 30 minutes, turning it once.
Meanwhile, wash and peel the celery and carrots, then julienne both. Mince the parsley.
Drain the chicken and save the marinade.

In a non-stick pan, heat 10 ml of extra-virgin olive oil and sear the chicken on both sides, add the remaining half of the onion and cook for another 8-10 minutes, stirring once in a while.  Add a pinch of salt, the parsley and the previously saved marinade.
Serve with the carrots and celery julienne dressed with a little lemon juice.
