Ingredients for the meringues
- 3 egg whites
- 150 gr. powdered sugar
- 2 tablespoons Limmi lemon juice
- 1 pinch of vanillin
Make the meringues by whipping the egg whites with the powdered sugar, Limmi lemon juice and a pinch of vanillin till stiff peaks form. Transfer the cream to a pastry bag with a grooved tip and squeeze the meringues on a baking sheet, leaving plenty of space between them. Bake at 70-80° C for about 2 hours.
Ingredients for the mascarpone cream
- 250 gr. mascarpone cheese
- 250 ml fresh heavy cream
- 50 gr. powdered sugar
Mascarpone cream preparation
Beat the mascarpone, fresh heavy cream and powdered sugar together until creamy and smooth. Crumble the baked meringues and add the mascarpone cream. On the side, mix the strawberries with 3 tablespoons of Limmi lemon juice, 2 tablespoons Limmi lime juice, and 1 tablespoon of powdered sugar, then let them rest for about 30 minutes.
Spoon the lemon and lime flavoured strawberries over the mascarpone cream, and top with coconut flakes.
