Lemon, Pine Nuts and Raisin Muffins

Ingredients for 6 muffins

  • 120 gr. four
  • 50 gr. sugar
  • 1 egg
  • 6-7 tablespoons Limmi lemon juice
  • 50 gr. sunflower seed oil
  • 2 teaspoons vanilla flavoured baking powder
  • pine nuts and raisins to taste

Preparation

Mix the flour, baking powder, sugar and a pinch of salt in a bowl. In another bowl, beat the egg with the lemon juice and oil. Combine the two mixtures and stir to form a batter. Fill the muffin moulds up to 2/3 of their height with batter, then add pine nuts and raisins. Bake at 180° C for 15-20 minutes.
