Ingredients for 6 muffins
- 120 gr. four
- 50 gr. sugar
- 1 egg
- 6-7 tablespoons Limmi lemon juice
- 50 gr. sunflower seed oil
- 2 teaspoons vanilla flavoured baking powder
- pine nuts and raisins to taste
Preparation
Mix the flour, baking powder, sugar and a pinch of salt in a bowl. In another bowl, beat the egg with the lemon juice and oil. Combine the two mixtures and stir to form a batter. Fill the muffin moulds up to 2/3 of their height with batter, then add pine nuts and raisins. Bake at 180° C for 15-20 minutes.
