Lemon scented turkey delight

Ingredients (serves 2/3)

  • 4 potatoes
  • capers to taste
  • 8 small tomatoes
  • 5 tablespoons Limmi lemon juice
  • 3 turkey breast fillets
  • 1 shallot
  • olive oil, salt, pepper to taste
  • chives

Preparation

Place the potatoes in a pan and boil till fork tender. While the potatoes are boiling, grill the turkey fillets and peel the tomatoes. Once the potatoes are done, peel and cut them into cubes.
Slice the scallion and brown it in a large pan with a little bit of oil. Add the peeled tomatoes, capers and cook on medium heat adding mineral water as needed to keep it from burning.
Cut the turkey into strips and add it to the tomatoes mixture together with the cubed potatoes. Add salt and pepper to taste, then LIMMI lemon juice also to taste. After about 5/6 minutes, turn the heat off and let it rest for a few minutes. Garnish with chopped chives and serve either hot or cold.
