Ingredients for 4 servings
- 300 gr. Savoiardi cookies (lady fingers)
- 400 gr. mascarpone or very fresh ricotta cheese
- 200 gr. sugar
- juice of 6 large lemons
- zest of 2 organic lemons
Thoroughly mix the mascarpone or ricotta cheese with the sugar and lemon zest. Spread half of the cream in a rectangular baking pan. Cover with a layer of Savoiardi cookies soaked in lemon juice. Cover with the remaining cream and top with grated lemon zest. Refrigerate and serve cold.
For a taller tiramisù, use a smaller rectangular pan and make multiple layers of cream and Savoiardi.
