Lemony Chickpeas Croquettes

Let’s cook something yummy!

  • 200 g boiled chickpeas
  • 1 egg
  • 1 bunch parsley
  • 3 tablespoons LIMMI lemon juice
  • bread crumbs
  • 1 garlic clove
  • salt and pepper to taste


In a blender, puree the chickpeas together with the garlic, parsley, egg, lemon juice, one pinch of salt, and one pinch of pepper till smooth. Let the mixture rest in the refrigerator for a few minutes. Thereafter, shape the mixture into croquettes, and roll them in breadcrumbs. Fry them in a pan until the crust is golden and delightfully crispy. Sprinkle a few drops of lemon juice over the croquettes, and serve.
