Lentils with Lemon and Mint

Lentils, as you probably know, are said to bring good luck. Ever noticed how their shape resembles coins? In fact, folks say they “bring money all year long” if eaten on New Year’s Day.

But why limit yourself to New Years’ day?! Get your fill of proteins, iron and prosperity with these delicious mint-scented lentils.

Ingredients

  • 250 g lentils
  • 3 tablespoons LIMMI lemon juice
  • 1 small Tropea onion (sweet red onion)
  • 1 rib celery
  • 1 carrot
  • 1 lt water (for the broth)
  • 1 tablespoon fresh mint (plus a few leaves to garnish)
  • 1 teaspoon cumin
  • 1 tablespoon extra-virgin olive oil
  • salt and black pepper to taste

Preparation

Make vegetable broth using the carrot, celery and 1/2 of the onion.
Finely chop and brown the remaining onion in a pan. Add the lentils, let them cook for a few minutes to develop the flavors, then add the cumin and enough broth to cover them completely.

Cook the lentils for about 30 minutes, adding broth a little at a time, as needed. When they are ready, stir in 3 tablespoons of LIMMI lemon juice, chopped mint, and salt and pepper to taste.    Let them cool down, and serve garnished with a few fresh mint leaves.
