Preparation time: 5 minutes + 30 minutes for the marinade
Ingredients (serves 4)
- 400 gr of boiled meat
- Juice of 2 lemons (6 tablespoons of Limmi lemon juice)
- 4 hardboiled eggs
- 2 boiled potatoes
- 1 cucumber
- 1 very fresh courgette
- 1 spoon of mustard
- 6 spoons of extra-virgin olive oil
- Chopped parsley
- Salt and pepper
Cut the meat into small slices or cubes and marinate it for about 30 minutes in the lemon juice ( about 5 spoons ). In the meanwhile boil the eggs (7 minutes). Then peel and cut the potatoes previously boiled, clean the cucumber and the courgette and cut them in very thin slices. Chop a little lemon rind ( only the yellow part!).
In a bowl prepare a sauce mixing well mustard with a plentiful spoon of lemon juice, then add a pinch of salt, a trickle of oil and, still stirring, pepper and the chopped lemon rind.
Place the meat on a large dish, the sliced hardboiled eggs and the vegetables. Sprinkle with parsley and chopped lemon rind and moisten with a couple of spoons of lemon juice. Season with the mustard sauce and serve.
