- 300 gr. raw, unpeeled shrimp
- 2 bay leaves
- extra-virgin olive oil
- 3 tablespoons Limmi lime juice
- 1 avocado
- 1 white melon (winter type)
- a few drops Limmi lemon juice
Place water, two bay leaves and salt in a pan, then add the shrimp and cook them for about 2 minutes.
Meanwhile, prepare the dressing by mixing abundant extra-virgin olive oil with 3 tablespoons of Limmi lime juice in a bowl till thoroughly combined.
Drain the shrimp and transfer them to a bowl filled with ice, to cool them quickly, and peel them.
Slice the avocado in half, remove the pit and coat it with lemon juice to keep it from oxidizing and turning brown. Cut the melon and avocado into chunks. Slide alternating between pieces of shrimp, melon, and avocado on each wooden skewer.
Evenly pour the dressing over the skewers and lay them on a serving dish. Season with salt and serve as an appetizer.
