Preparation time: 10 minutes + 3 hours at rest in the fridge
Ingredients (serves 4)
- 1 avocado
- juice of 1 lemon
- chopped cilantro ( or parsley )
- 1 onion
- 1 chopped Chile Serrano ( if you dont find it, take a very spicy hot pepper)
- ¼ cup of extra virgin olive oil
- salt and pepper as needed
Cut the avocado into two halves, take away the stone and the flesh from them ( with a teaspoon or a knife if the fruit isnt perfectly ripe), paying attention not to damage the peel, that you can use to serve the sauce.
In a bowl mix the avocado flesh with lemon and oil. Mash it with a fork. Add the cilantro ( or parsley), the chopped onion and chile terrano ( if you prefer it less hot, take the seeds away) and mix.Try it and season with salt and pepper as you like. Guacamole is ready to be tasted, spread on a tortilla or with your salad.

If you have been careful and you havent damaged the peel, serve the sauce in the avocado coat.
