Ingredients
130 g all purpose flour
80 g cane sugar
130 ml milk
2 tablespoons vegetable oil
3 tablespoons Limmi Sweet lemon juice
2 teaspoons baking powder
1 pinch of salt
For the frosting
1 package cream cheese (250gr)
2 tablespoons confectioners sugar
2 tablespoons Limmi Sweet lemon juice
yellow food colouring, as needed
Preparation
Sift the flour into a bowl, add the baking powder, sugar, salt, and mix well.
Add the oil and then the milk (at room temperature). Thoroughly combine all ingredients with a whip.
Pour the batter into a muffin tin lined with muffin paper cups, and bake for approximately 25/30 at180°C.
Make the frosting: place the cream cheese in a bowl, add two tablespoons of confectioners’ sugar, two tablespoons of lemon juice and a few drops of yellow food colouring.
Mix until the frosting is fluffy and soft.
Once the muffins are cool, top them with frosting using a pastry bag or, if you don’t have one, a spoon. Dust the tops with confectioners’ sugar.
Your muffins with lemon frosting are ready to enjoy!
