Looking for a delicious dish that will impress your vegetarian friends? Fill-up on energy and flavor with these tasty vegetarian pappardelle, made even more scrumptious by a pinch of turmeric, the bright orange spice known for its anti-inflammatory and liver detoxifying properties.
Ingredients for 4 servings
- 400 gr pappardelle pasta
- 2 artichokes
- 2 zucchini squash
- 1 aubergines (eggplant)
- 10 Taggiasca olives (Niçoise olives)
- 1 shallot
- Turmeric to taste
- 12 tablespoons LIMMI lemon juice
- Salt and pepper to taste
Clean the artichokes cut them into wedges, then place them in a bowl filled with water and 12 Tbsp of Limmi lemon juice.
Peel and slice the shallot, cook in a pan with a little bit of EVO (extra-virgin olive oil) till translucent, the add the artichokes. Sauté for a few minutes, then add a glass of water to the pan.
In the meantime, cut the zucchini and eggplant into cubes, then add them to the artichokes . Season with salt, pepper and a dash of turmeric (you can either grate it or use store-bought turmeric powder). Lastly add the olives and a little bit of chives.
Cook the pappardelle pasta in a separate pan, drain it, add it to the pan with the vegetables and sauté.
Serve sprinkled with grana or pecorino cheese. If you enjoy piquant flavours, add a bit of hot pepper; it goes very well with it.
