Preparation time: 20-30 minutes
Ingredients (serves 4)
- 800 gr of prawns (mazzancolle)
- 200 gr of rocket
- 1 dl of oil
- 1 lemon ( 3 tablespoons of Limmi lemon juice)
- Sufficient salt
Clean and dry the rocket well, place it on the bottom of the plate. The prawns, removing the dark part, take the flesh and keep the coral aside. Place the flesh in the basket of the steam pan, put on the flame at a moderate heat and cook for 4 minutes. Add 3 spoons of Limmi and then emulsify it with the oil and a pinch of salt; beating the mixture with a small whisk. Settle the shellfishes on a bed of rocket, garnish with the coral and pour on a drizzle the lemon sauce. Serve the prawns still slightly warm.
