Ingredients for 4 person
- Ribbon noodles with scampi and lemon
- 400 gr of ribbon noodles
- 400 gr of scampi ( not too big )
- 3 tablespoons of Limmi lemon juice
- 1 clove of garlic
- chilli pepper
- extra-virgin olive oil
The sauce has to be prepared at the moment, also using the cooking time of the ribbon noodles.
Clean and wash the shrimps, let them dry and slit or cut them in half lengthwise. Brown garlic and put the shrimps in a roomy and rather high frying pan. Salt, season with a bit of chili pepper and cook for about 10 minutes stirring the shrimps now and then/at intervals.
Strain the underdone pasta and put it in the frying pan with the shrimps, season it with all the lemon juice and add a little handful of chopped parsley. Mix and serve immediately.
