Rice and cauliflower croquettes are a tasty and healthy dish. They are baked in the oven, and therefore light and appetizing.
The lemon juice within them detoxifies the body, aids digestion and strengthens the immune system thanks to the vitamin C. Moreover, its unmistakable scent is a true and proper cure-all against anxiety and stress.
To fully exploit the beneficial properties of this citrus fruit, we recommend ending the meal with a serving of fresh strawberries dressed with lemon juice.


  • 130 grams rice
  • 1 smallpotato
  • 7-8 cauliflower florets
  • 250 grams strawberries
  • 50 ml lemon juice
  • saltto taste
  • bread crumbsas required
  • 10 ml seed oil

Equipment: pans, baking pan, bowl


Wash and peel the potato, cut it into chunks, place in a pan with plenty of water and cook it. Chop the cauliflower and add it to the potatoes. Boil the rice in plenty of unsalted water. Once it’s tender drain it, and transfer it to a bowl together with the potatoes and cauliflower. Mix well then add salt to taste and the lemon juice.

Shape the mixture into balls and coat them with breadcrumbs. Place the croquettes into a slightly oiled baking pan, drizzle a little bit of oil over them and bake in a pre-heated oven at 200° C for about 15 minutes.

How to prepare Strawberries Fruit Salad:

Wash and remove the leaves from the strawberries, cut them into small pieces and place them in a bowl.
Dress them with Limmi lemon juice to taste (4-5 tbsp) .
Place each portion of strawberries in a fruit salad bowl and serve immediately after the rice and cauliflower croquettes, which are delicious hot, or even served cold as a summer dish.
