It is also light and healthy, which makes it suitable for dieters and those who wish to mind their weight without losing out on taste.
This is how to prepare lemon flavoured rice with vegetables.
- 320 gr. rice
- 1 shallot
- ½ onion
- 4 carrots
- 2 zucchini squash
- 2 celery stalks
- 50 ml lemon juice
- salt to taste
- 15 ml extra-virgin olive oil
- white vine to taste
Equipment: Pot, sauté pan
Thoroughly wash and clean the carrots, zucchini and celery, setting aside the leaves of this last. Place all the vegetables in a pot filled with plenty of cold water, bring to a boil then let them simmer.
Meanwhile, chop the shallot and the onion, and brown them in a sauté pan with 10 ml of oil. Add the rice to the pan and let it toast for 1 minute before adding a little bit of white wine.
Salt the vegetable broth to taste and add it a little at a time to the rice, stirring continuously.
When the rice is done, add the lemon juice and 5 ml of oil to it and let it thicken for a few minutes.
Take 2 carrots and 1 celery stalk out of the broth, drain, cut them into small pieces and stir them into the risotto. Wash a few celery leaves. Plate the risotto and garnish it with celery leaves.
