A one-bowl summer dish you can bring to work, to the beach or any outing without even turning on the stove. A few ingredients are all you need for a light meal filled with vitamins, and flavour. Chick peas make you feel full, are rich in iron and improve glucose levels, while salmon’s bounty of omega-3 oils help lower cholesterol.
Ingredients
- 400 gr boiled chick peas (1 can)
- 100 gr red and yellow cherry tomatoes
- 100 gr smoked salmon (1 package)
- 50 gr rocket
- 2 tablespoons Limmi lemon juice
- Salt and pepper to taste
- Extra-virgin olive oil to taste
Preparation
Drain and rinse the chick peas, wash the rocket and tomatoes in running water and pat them dry. Slice the salmon into strips and cut the tomatoes in half. Place all ingredients in a salad bowl and toss them with a dressing made of lemon juice mixed with salt, pepper, and extra-virgin olive oil. Mix well and serve with sliced, toasted bread.
This is also a great salad to put in your lunch box or bring along on a hike. Just make sure to put it in a well-sealed container to keep it fresh, and ensure the dressing won’t leak out.
