Salmon and Goats’ Cheese Roll ups

Limmi lemon juice flavoured salmon and goats’ cheese roll ups are a great appetizer, as well as a light, exquisite second course when accompanied by an orange and fennel salad. iStock_000018037224Large

Ingredients for 4 servings

  • 150 gr. smoked salmon
  • 80 gr. fresh goats’ cheese
  • 1 bunch scallions
  • 2 tablespoons extra-virgin olive oil
  • 1 handful sliced almonds
  • 3 tablespoons Limmi lemon juice


Lay the smoked salmon slices next to each other in a dish lined with plastic wrap, so they look like one large slice. Drizzle 2-3 tablespoons of lemon juice over the salmon. In a bowl, mix the goats’ cheese with minced scallions.

Spread the goats’ cheese cream over the salmon, and top it with sliced almonds. Roll up the salmon to form a log, wrap it in plastic and refrigerate for about 1 hour. Thereafter, take it out of the fridge and cut it into rather thick slices. Tie each slice with strips of scallion. Place the roll ups on a serving platter and drizzle with extra-virgin olive oil mixed with Limmi lemon juice.
