Salmon, Rocket and Almonds Salad

An explosion of flavours and a wholesome dish that combines the vitamin E in almonds with the diuretic and digestive action of the rocket, the omega 3 in salmon, lusciousness of avocado, and brightness of lemon juice.

Are you ready to make this salad? Just beware: it’s surely yummy enough to become a must eat.

Ingredients

  • 100 g smoked salmon
  • 30 g slivered almonds (raw or already roasted)
  • A bunch of rocket
  • 8 cherry tomatoes
  • 1 avocado
  • 9 to 12 tablespoons LIMMI lemon juice
  • Aulus extra-virgin olive oil to taste
  • Salt and pepper to taste

Preparation

Place the raw slivered almonds in a frying pan for a few minutes until roasted. Meanwhile, cut the salmon into strips, wash the rocket and the cherry tomatoes. Cut the avocado in half.  Spoon out the pulp, cut it into chunks, and then slice the cherry tomatoes.

In a bowl, combine the rocket, the fish, tomatoes, and avocado. Dress the salad with extra-virgin olive oil, lemon juice, salt and pepper to taste, and then garnish it with the roasted slivered almonds.
