What you’ll need:
- 1 package ready-made shortcrust pastry (if you have time, make it yourself)
- 150 g smoked salmon
- 1 small bunch chives
- 6 tablespoons LIMMI lemon juice
- 3 zucchini squash
- 1 tablespoon Aulus extra virgin olive oil
- ½ onion
- A few parsley leaves
- 1 egg
- 1 pinch of salt
Preparation
Unroll the shortcrust pastry dough, lay it in a pie pan, and start making the filling.
Peel and cube the zucchini. Pour 1 tablespoon Aulus extra virgin olive oil in a frying pan, add the 1/2 onion, cook till golden, and then add the zucchini, 2 tablespoons LIMMI lemon juice, 1/2 glass of water and sprinkle with parsley.
Cook the vegetables for about 10 minutes (remember: the zucchini have to be soft but not completely cooked).
Now preheat the oven to 180° C.
Place in a bowl the chopped salmon, zucchini, a dash of salt, chopped chives, 4 tablespoons LIMMI lemon juice, and 1 egg. Mix till thoroughly combined. Prick the bottom of the shortcrust with a fork, and then lay the stuffing in the pan.
If you wish to cover the quiche, we recommend using a second roll of shortcrust pastry, and then brushing the top with beaten egg yolk to give it a distinctive shine.
Bake for about 25/30 minutes (follow the instructions on the shortcrust pastry box), and let it rest for at least 30 minutes before serving.
