Salmoriglio sauce is exactly what you need: an explosion of citrusy Mediterranean flavours that perfectly enhance grilled meats and fish.
Also known as sammurigghiu, salmurigghiu or salamarigghiu (Calabrian and Sicilian terms deriving from “salamoia”, meaning brine), this quick and easy to make traditional Sicilian sauce is also often used in Calabrian cuisine. Try drizzling it on swordfish or tuna steaks or use it as a marinade.
Ingredients
You’ll need:
- 200 ml Aulus extra-virgin olive oil
- 50 ml LIMMI lemon juice
- 1 bunch of parsley
- 1 tablespoon warm water
- 1 garlic clove
- 1 tablespoon oregano
- Salt and pepper to taste
Preparation
Mix the oil with lemon juice, chopped parsley, minced garlic, oregano, salt and pepper. Warm-up a tablespoon of water (do not let it boil), pour into the oil mix, and whip it vigorously with a fork to combine all ingredients. The salmoriglio sauce is ready to be drizzled on your grilled entrees.
