Shrimps and Pineapple Salad

A tasty, refreshing and light salad with the sweet, exotic flavour of pineapple.


  • 500 gr. raw shrimp
  • 1 whole pineapple, arugula, lettuce, carrots, lamb’s lettuce
  • 3 tablespoons Limmi lemon juice
  • 4 tablespoons extra-virgin olive oil
  • salt to taste
  • pepper to taste
  • bread croutons to taste


Remove the shells, devein the shrimp, then wash them under running water. Once they are clean, place them in a pan with salted boiling water and cook for about 3 minutes. Thereafter drain them and set aside to cool. Meanwhile, cut the pineapple into large chunks and put them in a bowl together with the shrimp, which should be cold by now. Wash and dry the salad, chop it into pieces and add it to the bowl with the shrimp and pineapple. Do the same with the carrots, julienne cut. Mix everything well. Dress the salad with a mix of extra-virgin olive oil and lemon juice, add toasted bread croutons to finish.
