Ingredients
- 200 gr. Carnaroli rice
- 80 gr. vegetables pickled in oil
- 80 gr. cannellini beans
- 2 carrots
- 1 zucchini squash
- 1 egg
- oil
- Limmi lemon juice
Preparation
Cook the rice in salted water. Thoroughly drain the oil from the pickled vegetables. Cook the cannellini beans. On the side, cut the carrots and zucchini squash into this strips, place them in a bowl and dress with oil, salt and Limmi lemon juice. Mix the rice with all the vegetable and beans, adding more salt if necessary. Garnish with sliced boiled eggs and basil leaves.
