This delicate and very tasty dish is perfect for those who are on a low-fat diet, but do not wish to forego flavor. Known for its long, dark colored grain, Venus rice grows in the Vercelli-Novara area of the region of Piemonte, and is a cross between black Asian rice and variety native to the Padan Plain.
Venus rice belongs to the Japonica subspecies. This brown rice is gluten-free, high in fiber, vegetable protein, and mineral salts, including selenium, zing, iron and calcium.
The name “Venus” derives from the belief that black rice is an aphrodisiac. Ready to taste it with avocado, the main ingredient of the exquisite Mexican sauce guacamole?

Ingredients
- 300 g Venus rice
- 1 ripe avocado
- 2 tomatoes
- 1 tablespoon tabasco
- 2 spring onions
- 9 tablespoons LIMMI lemon juice
- 3 tablespoons extra-virgin olive oil
- salt and pepper to taste
Preparation
Boil the rice in salted water and let it cool.
Peel and dice the avocado, place it in a bowl, then toss it with LIMMI lemon juice. Peel the tomatoes, remove all the seeds, dice them, and add them to the avocado. Cut the root off the spring onions, chop them, and add them to the bowl, together with the tabasco sauce.
Lastly, add the rice, extra-virgin olive oil, salt, pepper, and mix well to fully combine the flavors.
