Here is the recipe for a super soft, highly fragrant and incredibly tasty yogurt, coconut and lime juice bunt cake.
- 250 g 00 type flour
- 50 g coconut flour
- 3 whole eggs
- 200 g plain yogurt
- 100 ml seed oil
- 200 g sugar
- 40 ml Limmi lime juice
- 1 envelope (16 g) baking powder
for the glaze
- 90 g powdered sugar
- 30 ml Limmi lime juice
In a bowl, whip the whole eggs with the sugar and Limmi lime juice for about 10 minutes. Add the yogurt, the oil, and continue whipping for another 2-3 minutes.
Mix the 00 type flour with the coconut flour and the baking powder, then using a bottom to top motion, fold them into the eggs mixture with a spatula until well blended. Butter and flour a 24 cm dia. bundt pan, place the mixture into it and cook at 175° C for 40-45 minutes till done (check with a toothpick).
Once out of the oven let it cool, unmold, and decorate it with the glaze, prepared before-hand simply by mixing powdered sugar with Limmi lime juice.
