The first Olietto could only be the Lemon.
The idea was born one autumn afternoon when, walking in our “gardens by the sea” full of lemons and fragrant orange blossoms, we hear the call of the nearby olive pickers, because in Sicily lemon groves often border olive groves.
The joy mitigated the fatigue of harvesting by hand, the scents and colors of the two fruits so different but so similar at the same time, one yellow and the other green, integrated in perfect harmony, giving us the idea of creating a product that would combine two Italian excellences: olives with our lemon.

We chose rosemary in Sardinia, in its vegetation that had to adapt to the Mediterranean climate, the karst substrate, exposure to the winds and the nearby presence of the sea. Along the inland areas it is easy to smell the persistent scent of rosemary, with its late-winter blue flowering. Cut only when ordering to ensure absolute freshness.

White Truffle and Olives

The processing of this Olietto consists of two phases, as it is not possible to combine the ingredients in a simultaneous pressing. Extra virgin olive oil is extracted from olives, the natural aroma of truffles is extracted from fresh Italian truffles, which are combined together to make an Olietto with a refined and persistent flavor.
